Barkman Honey

Clover Honey Rice Pudding

    10 to 12 servings

INGREDIENTS

  • 1 cup Arborio rice
  • 5 cups whole milk
  • 2 cups heavy cream
  • 3/4 cup clover honey
  • 2 tsp. pure vanilla extract
  • 2 tbsp. butter
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 2/3 cup raisins

 

DIRECTIONS

In a large saucepan, place all ingredients except for raisins. Bring to a boil.

Reduce heat to a low simmer, stirring frequently to keep from sticking to bottom.

Allow to cook for 20 minutes, add raisins and cook for an additional 10 to 15 minutes, until rice is soft.

Remove from heat and transfer to single-serving bowls or to a large bowl.

Allow to cool at room temperature, then place in refrigerator covered tightly.

Rice pudding may be made a couple days ahead of time or served warm just after cooking.

If refrigerated and rice pudding becomes too thick, stir in milk to thin.

The addition of other ingredients can be added to make a signature rice pudding (coconut and ginger, pumpkin and cinnamon, cranberry and orange, cinnamon and chipotle).
