Barkman Honey

Honeyed Applesauce

    1 1/2 quarts

INGREDIENTS

  • 4 lbs. apples, peeled, cored and quartered
  • 1/2 cup wildflower honey
  • 3 tbsp. lemon juice
  • 2 tsp. lemon zest
  • 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 3/4 cup water

 

DIRECTIONS

Place all ingredients in a large stainless-steel pot and bring to a boil.

Reduce heat to a simmer, cover and cook for an additional 20 minutes.

Remove lid and cook on a simmer for an additional 10 minutes.

Remove from heat, allow to cool slightly and mash with a potato masher, or ricer, or blend in a food processor, depending on desired consistency.

Serve immediately or refrigerate.

Use a good cooking apple like Fuji, Golden Delicious, Granny Smith or Gravenstein.

Adjust amount of honey to reach desired sweetness depending on the sweetness of the apples.

Can be served warm or cold; try serving a chunky version warm over vanilla ice cream.
