Barkman Honey

Rhubarb Delight

INGREDIENTS

  • 1 1/2 cups unsweetened pineapple juice
  • 1 cup rhubarb, diced (fresh or unsweetened frozen)
  • 1 pint strawberry ice cream
  • 1/2 cup honey

 

DIRECTIONS

Place pineapple juice, rhubarb and honey in blender container; cover, blend until smooth about 1 minute.

Add ice cream and blend until smooth and frothy.

Serve immediately in tall chilled glasses.
