In a large pot, place wheat berries, water and salt.
Bring to a boil, reduce heat to simmer and cover for approximately 1 hour until wheat berries are tender.
Allow to cool.
Place cooled wheat berries in a large mixing bowl and add the rest of ingredients, toss until well combined.
Wheat berry salad can be served cold or warmed as a side dish, or add chicken or shrimp as a complete meal.
