2 1/2 dozen balls
Cream butter and honey in small mixing bowl.
Stir in vanilla.
Add remaining ingredients, except confectioners sugar.
Refrigerate dough for at least 2 hours.
Shape dough into 1″ diameter balls.
Dough will be crumbly.
Place 12 balls at a time on a high temperature plastic baking sheet lined with wax paper.
Cook on full power for 1 minute 15 seconds to 1 minute 45 seconds, or until no longer moist on outside.
Be careful not to overcook.
Allow cookies to cool slightly before removing from waxed paper.
Roll in confectioners sugar, while still warm.
Repeat with remaining cookies.
