Barkman Honey

Agave Banana Bread

INGREDIENTS

  • 3 1/4 cups all-purpose flour
  • 2 cups agave
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 5 large eggs (room temperature)
  • 3/4 cup vegetable oil
  • 3 cups mashed bananas, ripe (approx. 6)
  • 1/4 cup plain yogurt
  • 2 tsp. vanilla extract
  • 1 1/3 cups chopped walnuts
  • 2 tsp. baking powder

 

DIRECTIONS

Grease and flour two 9” x 5” x 3” loaf pans and knock out excess flour.

Sift together flour, baking powder, cinnamon and salt into a bowl.

In a stand mixer, beat together eggs and agave at high speed for 5-6 minutes.

Reduce speed to low and stream oil, then mix in bananas, yogurt and vanilla.

Remove from mixer and fold into flour mixture and walnuts.

Divide batter between both pans, and place in middle of a convection oven at 350 degrees for approximately 50 minutes, or until a wooden pick comes out clean.

Batter works very well as a muffin; reduce baking time as needed.

Top loaves or muffins with baking sugar, oatmeal, granola or extra walnuts before baking to add a nice topping.
