Cut a pocket into each chop and insert 1/2 slice of pineapple.
Combine honey, pineapple juice and mustard and spoon over each chop.
Bake at 350 degrees for 1 1/2 hours, drizzling honey sauce over the chops every 15 minutes.
Remove chops from oven; top each with 1/2 slice of pineapple and a maraschino cherry.
Return to oven for a minute or two to warm the fruit.
Heat any remaining honey sauce and serve with chops.
