Honey Roasted Butternut Squash And Apples

  • 2 butternut squash
  • 4 apples
  • 1/2 cup light amber honey
  • 1/2 cup apple juice
  • 2 tbsp. butter
  • 2 tbsp. pumpkin pie spice



Peel butternut squash and cut into large chunks.

Peel and core apples and cut into 8 wedges.

In a large roasting pan, toss the squash and apples with honey, apple juice, butter, pumpkin pie spice and salt and pepper.

Cover and bake at 375 degrees for approximately 20 minutes, remove cover and continue to bake until squash is tender and nicely browned.

Drizzle with additional honey before serving.

This is an excellent side dish for all your favorite holiday meals.

Sprinkle with chipotle spice blend for a smoky, spicier version.
