Cook potatoes in salted water until just tender.
Peel and slice thinly.
Combine honey and lemon juice.
Place potato slices in honey and lemon mixture, and put in refrigerator to marinate for at least 1 hour.
Sift together flour, baking powder and salt.
Combine milk and beaten egg, add slowly to flour mixture, stirring to make a smooth batter.
Dip potato slice in batter and then in coconut.
Fry in deep fat at 365 degrees until golden-brown.
