Four 8-ounce portions
Evenly coat salmon fillets with Cajun seasoning.
Sear in a nonstick pan at very high heat until just caramelized.
Remove from pan and place in a shallow baking dish, seasoning side up.
Coat top of each fillet with agave, and place in a 400-degree oven until desired temperature.
Serve over a mixed green salad over a bed of puréed celery root and wilted spinach.
