Peel and cut fruit into cubes.
Combine honey, water, vinegar and lemon juice in large kettle.
Tie spice in cheesecloth bag and add to mix.
Bring to full rolling boil, stirring.
Boil slowly for 10 minutes.
Add prepared fruit.
Cook gently until fruit is clear, 45 minutes to 1 hour.
Remove spice bag.
Pack fruit in jars, cover with syrup and seal.
