Jicama Apple and Carrot Slaw


  • 3 lbs. jicama
  • 8 Granny Smith apples
  • 1 lb. carrot
  • 1/2 cup agave
  • 1 cup mayonnaise
  • 2 tsp. sea salt
  • 2 tsp. ground ginger



Peel jicama, apples and carrots and julienne on a mandoline.

Place in a large bowl and add agave, mayonnaise, salt and ginger.

Mix well and allow to marinate in refrigerator for at least 1 hour before serving.

Works well as a side dish for a sandwich or burger, or as an accompaniment for chicken, fish or pork.
