Honey Mustard Green Beans

 

Yield: Serves 4 as a side

A perfect side dish for the holidays or any day, this super-simple honey mustard green bean recipe takes less than 20 minutes from start to finish. Sweet, savory and just a little bit spicy, these green beans shine when oven-roasted with a sauce featuring Naked Wild Honey and Dijon mustard.

Ingredients

  • 1 tbsp. Naked Wild Honey
  • 2 tsp. olive oil
  • 2 tsp. white wine vinegar
  • 1 tbsp. Dijon mustard
  • 2 tbsp. minced shallots
  • 1 tbsp. minced garlic
  • 1/4 tsp. cayenne pepper
  • Kosher salt and freshly ground black pepper
  • 12 oz. fresh green beans, trimmed

Directions

Preheat the oven to 425ºF. Line a baking sheet with foil or parchment paper and set aside.

In a large mixing bowl, whisk together the Naked Wild Honey, olive oil, vinegar, mustard, shallots, garlic, cayenne and salt and pepper to taste. (For less or no spicy heat, reduce or eliminate the cayenne pepper.)

Toss the green beans in the prepared honey mustard sauce, then transfer them to the baking sheet, distributing evenly.

Use a spatula to scrape any remaining honey mustard sauce from the bowl to the green beans.

Roast the honey mustard green beans for 12-15 minutes, tossing once about halfway through, until they’re tender-crisp.
