Barkman Honey

Mulled Honey Cranberry Sauce


    6 cups


  • 24 oz. cranberries, fresh or frozen
  • 3 1/2 cups cranberry juice cocktail
  • 1 1/2 cups clover honey
  • 2 tbsp. orange peel, grated
  • 2 cinnamon sticks
  • 3 tsp. fresh ginger, grated
  • 1 tsp. salt
  • 1 tsp. coriander, ground
  • 4 whole cloves



In a heavy-bottom saucepan, combine cranberry juice, honey and orange peel.

Bring to a simmer and continue to stir until honey dissolves.

Add remaining ingredients and return to a low simmer.

Allow to simmer until berries burst and sauce has thickened while stirring frequently, about 10 to 15 minutes.

Remove from heat, discard cinnamon sticks and cloves, allow to cool and refrigerate at least 4 hours before serving.

Perfect as a condiment for roasted turkey, fold in mayo for a sandwich spread, or top a slice of cheesecake and drizzle with a little additional honey.
